- 1 large round brinjal
- 1 teaspoon turmeric powder

Method
First, wash the brinjal thoroughly and pat it dry. Slice it into round pieces about half an inch thick. Make sure the slices are neither too thin nor too thick to ensure even cooking.
In a large plate, mix turmeric powder, red chili powder, salt, and a pinch of sugar. Coat each brinjal slice evenly on both sides with this spice mixture. Let them rest for 5 to 10 minutes so the spices seep in and the brinjal releases slight moisture.
Heat 2 to 3 tablespoons of mustard oil in a pan or tawa. Once the oil starts to smoke lightly, reduce the flame to medium.
